Here are some of the most commonly used ingredients in our dishes:

PURPLE CORN NATIVE TO THE ANDES, USED SINCE THE INCA ERA, HAS MANY BENEFICIAL PROPERTIES INCLUDING LOWERING CHOLESTEROL, IMPROVING CIRCULATION, ETC. THANKS TO VITAMINS B, C, CAROTENE AND ANTHOCYANINS. MAIZ MORADO IS USED TO MAKE CHICHA MORADA OR YOU CAN FIND IT IN PISCO.

THIS CHILI BELL PEPPER LOOKS LIKE A MINIATURE BELL PEPPER. IN PERU IT IS FOUND BOTH UNRIPE (GREEN) AND RIPE (RED) AND IS USED IN VARIOUS DISHES SUCH AS CEVICHE. VERY SPICY.

IS THE MOST COMMON CHILI PEPPER IN PERU. ITS LOW SPICINESS AND ORGANOLEPTIC CHARACTERISTICS MAKE IT A PART OF MANY PERUVIAN DISHES SUCH AS CREMA A LA HUANCAINA AND ANTICUCHOS.

Cocktail Piscobar

Pisco is a distillate of white wine or fresh grape must, typical of Peru, where it is considered a true national symbol.

It is mainly produced in the southern coastal regions, such as Ica, Arequipa and Moquegua.

Its origin dates back to colonial times, when Spanish settlers began distilling the excess wine produced in the area. The name comes from the port of Pisco, from which the drink was exported.

Peruvian Pisco is distinguished by being made without the addition of water, from eight varieties of aromatic and nonaromatic grapes, and is protected by an appellation of origin. It has a dry and intense taste, and is often used in celebrated cocktails such as the Pisco Sour.
